| Synonymous with serious red wine capable of aging into subtle splendor. For this reason Cabernet Sauvignon is also the best traveled red wine variety, but since it is a relatively late ripened it is more suited for warmer climates where it is responsible for a very large number of the world's best red wines. In California's Napa Valley this varietals produces wines of splendid depth and structure punctuated by delicious flavors of black cherry and herbs. California's reputation was created by its rich and weighty wines, currently producers are focusing on softer, more approachable wines. | ||

| Merlot ripens early, so it is much easier to grow than most grapes. Its bigger berries and thinner skins generally produce less tannic, and more opulent wines that can be enjoyed sooner. | This is the most elusive grape, it is relatively early ripening and very sensitive to terroir. It buds early and ripens early, which makes it very suitable for cooler climate. In California the most promising areas are Carneros, Russian River Valley, parts of Monterey County and Santa Barbara County. While the wines from Carneros and Monterey County are generally bolder and broader, those from Russian River and Santa Barbara are known for their bright and sweet fruit with captivating bouquets redolent of ripe black cherries, violets and spice. | ||
